Samenvatting

Hoofdstuk 11 behandelt talrijke raakpunten tussen voeding en metabolisme. Een evenwichtige voeding levert alle noodzakelijke bouwstenen voor het anabolisme, maar ook voldoende brandstof voor het energiemetabolisme. We beginnen met de onderverdeling tussen essentiële en niet-essentiële voedingsstoffen (de eerste moeten in het voedsel zitten, want de mens kan die niet zelf aanmaken). Dan bekijken we de aanbevolen dagelijkse hoeveelheid (ADH) van voedingstoffen, zowel vanuit het standpunt dat tekorten moeten worden vermeden, maar ook dat er geen excessieve inname mag gebeuren; dit met aandacht voor de invloed van leeftijd, geslacht en zwangerschap. We bespreken daarna de dagelijkse inname van macronutriënten: water en energie (vooral ingenomen als koolhydraten en vetten) en eiwitten. Wat betreft voedingseiwit besteden we aandacht aan begrippen als eiwitkwaliteit, limiterend aminozuur, complementatie en proteïne-energiemalnutritie. Dan volgen de micronutriënten (mineralen en vitaminen). Aandachtspunten zijn frequente tekorten (vitamine A, ijzer, zink, jodium) en de relatie tussen het vitamine B-complex en co-enzymen.
