9. Suikers, suikervervangers en zoetstoffen

Samenvatting

Saccharose, sucrose, riet- of bietsuiker zijn alle synoniemen voor de suiker in de huishoudelijke suikerpot, in koek, snoep, gebak, likeur, en in vele natuurlijke en industrieel bewerkte voedselproducten. Saccharose verzorgt bijna 25% van de energie van het westerse dieet en is, indien frequent gebruikt, verantwoordelijk voor cariës en een belangrijk deel van het obesitasprobleem. Bij een gebruik van 1 kg per week per persoon (waarvan 700 gram als ‘verborgen’ suiker in industrieel bereid voedsel, frisdranken en snacks) streven de Voedingsraden van de meeste westerse landen naar een reductie van het gebruik van saccharose. Het feit dat door kinderen bijna 40% van de saccharose, in de vorm van snacks, koek, snoep en (fris)drank, tussen de maaltijden door wordt genoten vormt – zoals bekend – een probleem voor het gebit.
