Samenvatting

In de jaren dertig werden de eerste epidemiologische onderzoeken naar voeding en tandcariës gepubliceerd. Bij een vergelijking tussen twee volksstammen in Kenya, de Masai en de Kikuyu, bleek het gebit van de Masai aanzienlijk beter dan het gebit van de Kikuyu (Orr en Gilks, 1931).

Spoorelementen zijn noodzakelijke nutriënten, waarvan de dagelijkse behoefte van de mens minder dan 100 mg is. De behoefte aan calcium is groter, zodat het eigenlijk geen spoorelementen genoemd mag worden.
