2023, Food Research InternationalCitation Excerpt :Moreover, the ingestion of the target quantity of proteins through the diet is not always sufficient to guarantee their physiological output. In fact, protein deficit in elderly is mainly caused by the changes of the gastrointestinal (GI) process conditions occurring with ageing, including changes in the secretion of saliva, stomach and pancreatic juices, insulin, and bile, which in turn may affect food transit rate and nutrient absorption (Drewnowski & Shultz, 2001; Rémond et al., 2015; Saunier & Doré, 2002). For example, an increased secretion of saliva bearing higher amylase concentration, a higher gastric pH, reduced levels of GI enzymes (e.g., 4-folds for pepsin), and lower bile secretions are expected in the elderly (Mackie, Mulet-Cabero, & Torcello-Gomez, 2020).

It has been shown that healthy elderly males have a higher diversity of E. coli [44] which could be due to the higher number of non-dominant types in their gut. It has to be noted that in this study we analysed a subset of E. coli isolates (696 out of 1566) from 45 out of 59 healthy individuals, and therefore, this observation could have been different, if all isolates had been tested.

The gut microbiota in newborn infants is characterized by early colonization with Enterobacteriaceae, Enterococcus, Lactobacillus, and Streptococcus, followed by a rapid succession of Bifidobacterium, Bacteroides, Clostridium, and Eubacterium (Saunier and Dore, 2002). In our study the lowest activity of fecal enzymes was observed in the fecal water of children.
