Samenvatting

Koolhydraten zijn belangrijke macronutriënten die een rol spelen in de biosynthese van verschillende structuren en moleculen, en bijdragen aan de energiebehoefte. Koolhydraten kunnen worden onderscheiden op basis van hun grootte, zoals enkelvoudige koolhydraten, monosacchariden, en meervoudige koolhydraten, polysachariden. Daarnaast zijn er nog andere details waarop koolhydraten geclassificeerd kunnen worden. Na inname verschillen de koolhydraten wat betreft metabole respons en biologische beschikbaarheid. De glykemische index is hier een goed voorbeeld van. Koolhydraten staan vanwege hun energetische waarde en respons op het hormoon insuline vooral in de belangstelling bij suikerziekte. De vraag ligt dan ook voor de hand of koolhydraatbeperking bij suikerziekte zinvol is. Al deze aspecten komen in dit hoofdstuk uitvoerig aan bod.
